Paul's Pudding

Family Recipe, Paul's Pudding
Our family's version of the traditional noodle kugel. A sweet yet light dish often served at our holiday festivities. The recipe can easily be doubled to serve a larger crowd.

  • 8 oz noodles (1/2 box)
  • 2 eggs
  • 3/4 cup sugar
  • 1 cup milk
  • dash of salt
  • 3 T cottage cheese
  • 2 T sour cream
  • 1 t vanilla (or more to taste!)
  • Sugar & Cinnamon

Preheat oven to 350 degrees.

Put up a medium size pot of water, add a dash of salt and bring to a boil. Meanwhile, combine eggs, sugar, milk, salt, cottage cheese, sour cream and vanilla in a medium size mixing bowl. Whisk until blended but lumpy (The cottage cheese and sour cream will not break down completely).

Add noodles to salted boiling water and follow directions on the package. Do not overcook. When ready, drain pasta (do not rinse) and put into slightly greased baking pan (9"x9"). Add liquid mixture to the pan and sprinkle generously with sugar and cinnamon.

Bake for 30-45 minutes, depending on your oven. A toothpick should come out mostly dry. Serve!
